Preparation
Combine flour, chai, and salt in a medium bowl, Use a whisk to mix well.
In the bowl of a stand mixer fitted with a paddle attachment, combine butter and sugar. Mix on medium speed until light and fluffy. Add vanilla and mix until smooth.
Slowly add the dry ingredients to the stand mixer and mix until a crumbly dough starts to form.
Turn the dough out onto a solid surface and shape into a log, about 2-inches in diameter. Wrap the dough log tightly in plastic wrap and refrigerate for 1 hour.
Preheat oven to 350℉. Line two baking trays with parchment paper.
Remove the log from the refrigerator and slice into cookies ½-inch thick. Place the cookies onto the baking trays, spaced 1-inch apart.
Bake the cookies in the oven for 12-15 minutes, or until the edges are set and the tops are dry to the touch.Â
Allow the cookies to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.Â
Melt the chocolate in a microwave-safe bowl, on 30-second intervals, stirring in between until the chocolate is smooth.
Transfer chocolate to a disposable piping bag, and cut a very small opening at the tip. Drizzle the chocolate over half of each cookie. Sprinkle with sparkling sugar, if desired.
Chill the cookies in the refrigerator for 10 minutes, or until the chocolate is set. Enjoy!
