Toasted Coconut Cranberry Pecan Granola

  • 2 cups old fashioned oats

  • 1 cup pecan halves

  • ½ teaspoon salt

  • ¼ cup ground cinnamon

  • ¼ cup olive oil

  • ¼ cup honey

  • 1 teaspoon vanilla extract

  • ¾ cup sweetened coconut flakes

  • ¾ cup dried cranberries

  1. Preheat oven to 350℉. Line a baking tray with parchment paper and set aside.

  2. In a large mixing bowl, combine the oats, pecans, salt, and cinnamon. Mix well.

  3. Add oil, honey, and vanilla to the bowl and mix until everything is evenly coated.

  4. Pour the mixture onto the prepared baking tray and spread into an even layer.

  5. Bake the granola in the oven for 20-25 minutes, or until lightly browned. Halfway through the bake time, add coconut and stir granola. Once complete, remove from the oven and cool completely on baking tray.

  6. Break the granola into pieces and add cranberries. Mix well. Enjoy!
