Sweet Southern-Style Cornbread

  • 1 cup all-purpose flour

  • 1 cup yellow cornmeal

  • ⅔ cup white sugar

  • 1 teaspoon salt

  • 3½ teaspoons baking powder

  • 1 egg

  • 1 cup milk

  • ⅓ cup vegetable oil

  • ¼ cup diced jalapenos (optional)

  • ½ cup shredded cheddar cheese (optional)

  • 1 cup canned sweet corn kernels, drained (optional)

  1. Preheat oven to 400°F.

  2. Spray or lightly grease a 9-inch round cake pan.

  3. In a large mixing bowl, whisk together flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Stir in optional ingredients. Pour batter into prepared pan.

  4. Bake in preheated oven for 25-35 minutes, or until a cake tester inserted into the center of the loaf comes out clean.

  5. Remove from oven and let cool on a wire rack before serving.
