Sweet Potato Casserole with Toasted Marshmallows

  • 5 medium sweet potatoes

  • ¼ cup unsalted butter

  • ½ cup packed dark brown sugar

  • 4 tablespoons orange juice

  • 1 teaspoon ground cinnamon

  • ⅛ teaspoon ground nutmeg

  • ⅛ teaspoon ground cloves

  • Salt, to taste

  • 1 bag (10 ounces) mini marshmallows

  1. Peel sweet potatoes and cut into 2-inch cubes. Place into a large pot with enough water to cover the potatoes, and salt the water.

  2. Bring to a boil and cook until tender, about 15-20 minutes. Remove from heat and drain.

  3. Preheat oven to 350℉.

  4. Place sweet potatoes into a large mixing bowl and mash. Add butter, sugar, juice, and spices to the sweet potatoes, then use an electric hand mixer to blend ingredients, until well combined. 

  5. Spread sweet potato mixture into a 13x9-in baking dish and top with mini marshmallows.

  6. Bake for 30-35 minutes, until marshmallows are golden brown. Enjoy!
