Spicy Chocolate Bourbon Pecan Pie

Ingredients

For pie crust:

  • 1 cup all-purpose flour

  • ¼ cup finely chopped pecans

  • 1 tablespoon granulated sugar

  • Pinch of salt

  • ½ cup unsalted butter, cold, cubed

  • 2 tablespoons cold water


For pie filling:

  • ¼ cup unsalted butter

  • 2 ounces bittersweet chocolate

  • 3 large eggs

  • 1 cup granulated sugar

  • ¾ cup dark corn syrup

  • 1 teaspoon vanilla extract

  • 2 tablespoons bourbon

  • ¼ teaspoon salt

  • ¼ teaspoon cayenne pepper

  • 1½ cups pecan halves

  1. Make pie crust: combine the flour, chopped pecans, sugar, and salt in a large mixing bowl. Add the butter and mix with your hands until the mixture resembles coarse crumbs. Pour in the water and continue mixing with your hands until a cohesive dough forms and holds together without being too wet or too sticky. If the dough is too dry, add more water, 1 tablespoon at a time. If the dough is too wet, add additional flour 1 tablespoon at a time. Cover the dough with plastic wrap and refrigerate for 30 minutes.

  2. Preheat the oven to 350℉.

  3. Make pie filling: melt butter and chocolate in a small saucepan over low heat, stirring constantly. Remove from heat and let cool. 

  4. Beat eggs in a large mixing bowl until frothy, and then blend in the sugar. Stir in the syrup, vanilla, bourbon, salt, cayenne pepper, and melted chocolate mixture until well combined.

  5. Remove dough from refrigerator and, using small chunks at a time, fill the bottom and sides of a 9-inch pie pan. Press the dough into the pan so it fits tightly. 

  6. Add the pecan halves to the pie crust and arrange them evenly across the bottom. Pour the pie filling mixture over top of the pecans. 

  7. Bake the pie until filling is set, about 45-60 minutes. Check that a cake tester comes out clean from the center.

  8. Place the pie on a wire rack to cool completely and to allow the filling to fully set. Enjoy!
