Soft & Chewy Double Chocolate Chip Cookies

Ingredients

  • ¾ cup unsalted butter, softened

  • ½ cup packed light brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tablespoon vanilla extract

  • 1½ cups all-purpose flour

  • ½ cup cake flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup 72% dark chocolate chips

  • 1 cup milk chocolate chips

Preparation

  1. In the bowl of a stand mixer fitted with a paddle attachment, add butter and both sugars. Beat together on medium speed until light and fluffy.

  2. Add eggs and vanilla. Mix again until light and fluffy.

  3. Combine both flours, baking soda, and salt in a large bowl. Mix well. Pour the dry ingredients into the wet, â…“ at a time, and mix on low speed. Scrape down the bowl as needed.

  4. Fold in chocolate chips. Use a large cookie scoop (about 2 tablespoons) to scoop the dough onto a baking tray lined with parchment paper, leaving 2-inches between cookies. 

  5. Chill the cookie dough for 1 hour. Meanwhile preheat the oven to 350℉. 

  6. Bake the cookies for 15-18 minutes, or until the edges are golden and the tops are dry to the touch.

  7. Allow the cookies to cool on the tray for 5 minutes then transfer to a wire rack to cool completely. Enjoy!
