S'mores with Homemade Graham Crackers

Ingredients

For the graham crackers:

  • 1½ cups whole-wheat flour

  • â…“ cup light brown sugar

  • ¾ teaspoon salt

  • ¼ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ½ cup unsalted butter

  • 2 tablespoons honey

  • 1 tablespoon whole milk

  • 1 teaspoon vanilla extract


For the s’mores:

  • 1-2 full-sized chocolate bars

  • 12 large marshmallows

  • FreshJax's Campfire Smokey Sea Salt

Preparation

  1. Make the graham crackers: Place flour, sugar, salt, baking powder, and baking soda in a food processor fitted with the blade attachment. Pulse a few times to combine.

  2. While cold, cut butter into small cubes. Scatter over the dry mixture and pulse until combined and crumbly.

  3. Add honey, milk, and vanilla extract. Pulse until the dough forms.

  4. Remove the dough from the food processor and divide into two equal portions. Form each portion into a disc and wrap both in plastic. Chill for at least one hour.

  5. Meanwhile, using 2 racks, divide the oven into thirds, and preheat the oven to 350ºF.

  6. Working one dough disc at a time, generously flour your counter and place dough center. Roll the dough until roughly ⅛-inch thick. 

  7. Using a ruler to guide you and a pizza cutter or sharp knife, trim the edges to create a 9-inch square and discard the scraps. Place onto a baking sheet lined with parchment paper, and brush away excess flour. Repeat with remaining dough.

  8. Cut each dough square into 12 mini-rectangles: make 4 parallel cuts in one direction, then make 3 parallel cuts in the other direction. Make sure to cut all the way through the dough, but do not separate the rectangles. 

  9. Using the blunt end of a skewer or a fork, prick each mini-rectangle a couple of times.

  10. Bake in the preheated oven for about 16 minutes, rotating the trays halfway through. The crackers are done when they are browned and dry when touched in the middle.

  11. Let the crackers cool completely on the baking sheet, then break the crackers into mini-rectangles along the cut lines.

  12. Assemble the s'mores: Once cooled, divide the graham crackers into matching pairs. Place 1-2 squares of chocolate onto one graham cracker and lightly melt with a butane torch. Top the semi-melted chocolate with a marshmallow.

  13. Toast the top and sides of the marshmallow with the torch and immediately sprinkle with Campfire salt.

  14. Top with second graham cracker and enjoy!
