
Ingredients
For the cookies:
3 cups all-purpose flour
1 cup black cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon salt
2 teaspoons espresso powder
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup dark brown sugar, packed
2 tsp vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips
For the filling:
16 ounces premade cream cheese frosting
Red gel food coloring
1 cup cherry jam
14 gummy candy vampire fangs
Candy eyes, optional

Preparation
Preheat oven to 375℉. Line a baking tray parchment paper and set aside.
In a large bowl, combine flour, cocoa powder, baking soda, baking powder, salt, and espresso powder. Set aside.
Add butter and both sugars to the bowl of a stand mixer fitted with a paddle attachment. Mix together on medium speed until light and fluffy.
Add vanilla extract and eggs. Mix again until well-combined.
Slowly, mix in the dry ingredients â…“ at a time until the dough just comes together.
Stir-in chocolate chips.
Use a medium cookie scoop to scoop the dough and place it onto the prepared baking trays, leaving 2-inches space in between.Â
Bake the cookies in preheated oven for 10-12 minutes, or until the edges are set and the tops are dry.Â
Let them sit on the baking pan for 5 minutes then transfer to a wire rack to cool completely.Â
Reserve 2 tablespoons of frosting, and combine the remainder in a small bowl with food coloring. Add as much of the food coloring as needed to achieve the desired color.
Transfer the frosting to a piping bag, and pipe a ring of frosting to the bottom of half of the cookies. Spoon some jam into the center of the frosting ring, and place a second cookie on top.
Gently press the gummy candy vampire fangs into the side of the cookies. Using the reserved frosting, add the candy eyes to the top of each cookie. Enjoy!
