Lemon Lavender Cookies

Ingredients

For the cookies:

  • 2 cups all-purpose flour 

  • 2 teaspoons cornstarch 

  • ½ teaspoon salt

  • 1 teaspoon baking soda

  • ½ cup unsalted butter, softened 

  • 1 cup HBD x FreshJax Lavender Sugar 

  • 1 large egg 

  • 2 tablespoon lemon extract 

  • 2 tablespoons lemon zest 

  • Yellow food coloring, as desired

  • 2 tablespoons fresh lemon juice 


For the lemon glaze:

  • 1 cup powdered sugar

  • 2 to 3 tablespoons fresh lemon juice, as needed

  • Lemon zest, for garnishing

  • Flaky sea salt, for garnishing

Preparation

  1. Make the cookies: Line two baking trays with a silicone mat or parchment paper. Set aside. In a medium bowl, combine flour, cornstarch, salt, and baking soda. Set aside.

  2. In the bowl of a stand mixer fitted with the paddle attachment cream the butter, about 2 minutes, on medium-high speed. Add the sugar, and beat until light and fluffy, about 2 minutes.

  3. Scrape down the sides of the bowl. Add the lemon zest, lemon juice, egg, lemon extract, and food coloring. Beat together, about 2 minutes.

  4. Reduce mixer speed to low, and slowly add the dry mixture, â…“ at a time, until just combined.

  5. Using a medium cookie scoop, form equal-sized mounds of dough, roll into balls, and flatten slightly. Place dough on lined baking trays, spaced at least 2 inches apart. Refrigerate for 30 minutes, while the oven is preheating. Preheat oven to 350℉.

  6. Bake for 10-15 minutes, or until edges have just started to brown, and the tops are just set, even slightly glossy. Allow cookies to cool completely on baking tray, about 20 minutes. 

  7. Make the glaze: In a medium bowl, add the powdered sugar, 2 tablespoons lemon juice, and whisk until smooth and combined. Depending on preference and desired glaze consistency, you may have to play with the sugar and lemon juice ratios slightly.

  8. Using a small spoon, add 1 tablespoon of glaze to the center of each cookie, and spread out the glaze using the back of the spoon. Repeat until all cookies are glazed.

  9. Sprinkle a small pinch of lemon zest and flaky salt over all cookies before the glaze sets. Enjoy!
