  • 1 box refrigerated pie crust

  • 1 cup of jam, any flavor

  • 1 large egg

  • 1 teaspoon water

  • Turbinado (coarse) sugar, for sprinkling

Preparation

  1. Preheat oven to 425℉. Line two baking trays with parchment paper and set aside.

  2. Unroll each pie crust and use a rolling pin to gently roll out the dough. 

  3. Use a sharp knife or pizza cutter to cut each crust into a large square. Then cut each large square into four smaller squares. Transfer the squares onto the prepared baking tray.

  4. Using the dough scraps, use a very small round cookie cutter, about 1-inch (a piping tip also works well!) to cut out eight circles.

  5. Spoon some jam into the center of each square and fold three of the corners to the center.

  6. In a small bowl, combine the egg and water. Mix well. Use a basting brush to brush the egg wash over the exposed dough. Place the dough circle over the area where the three corners meet. Brush the circle with egg wash.

  7. Sprinkle the dough with turbinado sugar. 

  8. Bake for 15-20 minutes, or until the pie crust is golden brown. 

  9. Allow to cool on the tray for 5 minutes then transfer to a wire rack to cool completely. Enjoy!
