
Ingredients
For the streusel:
½ cup dark brown sugar, packed
½ cup all-purpose flour
1½ teaspoons cinnamon
¼ teaspoon salt
¼ cup unsalted butter, melted
For the cake:
½ cup unsalted butter, softened
â…“ cup granulated sugar
¼ cup dark brown sugar
2 large eggs, room temp
1 teaspoon vanilla extract
¾ cup plain, full-fat Greek yogurt
1½ cups all-purpose flour
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 (14.5 ounce) can of fried cinnamon apples

Preparation
Preheat oven to 350°F. Line an 8x8 glass baking dish with parchment paper.
Make the streusel: In a medium bowl, whisk brown sugar, flour, cinnamon, and salt. Stir in melted butter with a fork until crumbly. Set aside.
Make the cake: In a large bowl, combine the butter and both sugars. Mix with an electric hand mixer on medium speed until light and fluffy.
Add the eggs and vanilla then mix until smooth. Add Greek yogurt and mix until well-combined.
In a separate bowl, whisk flour, baking powder, baking soda, and salt. On low speed, mix the dry ingredients into the wet until smooth and just combined. Set aside.
Drain the liquid from the apple can and roughly chop the apples.
Spread half of the batter into prepared baking dish. Sprinkle half the streusel evenly over the batter. Add the chopped apples. Spread the remaining batter on top. Finish with the remaining streusel.
Bake for 40–45 minutes, or until a cake tester inserted inserted in the center comes out clean.
Cool for 15 minutes in the baking dish before slicing and serving. Enjoy!
