Double Chocolate Banana Bread

Ingredients

  • 2 cups all-purpose flour

  • 2 tablespoons cocoa powder

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

  • ½ cup brown sugar

  • ¼ cup vanilla sugar

  • ½ cup unsalted butter, room temperature

  • 2 large eggs

  • 2 medium overripe bananas

  • ½ cup mini semi-sweet chocolate chips

  • ¼ cup simple syrup

Preparation

  1. Preheat the oven to 350℉. Lightly grease a 9x5-inch loaf pan.

  2. Combine flour, cocoa powder, baking soda, and salt in a medium bowl.

  3. Using a stand mixer with a paddle attachment, beat both sugars, butter, and vanilla until light and fluffy. 

  4. In a separate bowl, mash bananas with a fork then add eggs. Mix until well blended. Add banana mixture to stand mixer and stir until just combined.

  5. Slowly add flour mixture to stand mixer until just combined - careful not to overmix. Fold in chocolate chips with a silicone spatula. 

  6. Pour batter into the prepared loaf pan.

  7. Bake in the preheated oven for 45-60 minutes, or until a cake tester inserted into the center comes out clean. 

  8. Let bread cool in pan for 10 minutes, then remove and place on wire rack.

  9. Pour simple syrup over top while the bread is still warm and allow to cool completely before serving.
