Preparation
Preheat oven to 350℉. Line a baking tray with parchment paper. Arrange the oats and almonds in a thin layer on the tray. Bake for 5 minutes, stir, then bake for an additional 5 minutes until the oats and almonds are lightly toasted. Transfer to a large mixing bowl. Add cinnamon and mix well.
In a small saucepan over medium-low heat, combine the honey, butter, brown sugar, and vanilla. Stir constantly until the butter has fully melted and the mixture is smooth and combined.
Pour the warm butter mixture into the bowl with the toasted oats and almonds. Mix well and let sit for 1 minute. Add cranberries and chocolate chips. Mix again.
Transfer the oat mixture to a 9x9 baking dish that has been lined with parchment paper. Use your hands or a silicone spatula to firmly press the oat mixture into the dish. Sprinkle with flaky salt.
Cover and chill in the refrigerator for 2 hours. Remove the granola from the baking dish and cut into 12 bars. Enjoy!
