Blueberry Oatmeal Creme Pies

Ingredients

For the blueberry marshmallow creme:

 

Oatmeal Cookies:

  • ½ cup unsalted butter, room temp

  • ½ cup light brown sugar

  • ½ cup dark brown sugar

  • 1 tablespoon molasses

  • 1 large egg, room temp

  • 2 teaspoons vanilla extract

  • 1 ¼ cups all-purpose flour

  • ¾ cup old fashioned oats

  • ¾ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 tablespoon FreshJax's Maple Cinnamon topping

Preparation

  1. Make the blueberry marshmallow creme. Set aside. (If the marshmallow creme was made ahead of time, place the creme in an air-tight container and into the refrigerator. Allow the marshmallow creme to return to room temperature before piping it into the cookie sandwiches.)

  2. Preheat the oven to 350°F.

  3. Make the cookies: In a stand mixer fit the paddle attachment, combine the butter, sugars, and molasses. Beat until light and fluffy.

  4. Scrape down the sides of the bowl and add egg and vanilla. Mix until well-combined.

  5. In a separate bowl, use a fork to stir together the remaining ingredients: flour, oats, baking soda, salt, and maple cinnamon seasoning.

  6. Add the dry ingredients to the wet, ⅓ at a time, and mix on medium speed until just combined. Scrape down the side of the bowl in between adding the dry ingredients.

  7. Line a baking tray with parchment paper. Scoop 1 tablespoon of the dough into your hands and roll into a ball. Place the dough balls on your cookie sheet, about 2 inches apart. Place the baking trays into the refrigerator for 10 minutes to chill the dough.

  8. Bake for 12-15 minutes, or until the edges of the cookies are set but the centers are still soft. 

  9. Allow the cookies to cool on the baking tray for 5 minutes then move to a wire rack and cool completely.

  10. Transfer the blueberry marshmallow creme to a piping bag fitted with a round tip.

  11. Pipe the marshmallow creme onto the backside of one of the cookies and sandwich together with another cookie. Enjoy!
