Ingredients
2 peaches, halved (pit removed)
½ tablespoon tajin seasoning
4 ounces mascarpone cheese
½ cup heavy cream
¼ cup powdered sugar
1 teaspoon vanilla extract
2-3 basil leaves, cut into ribbons (chiffonade)
Honey, for drizzling

Preparation
Preheat oven to 375℉. Line a baking tray with aluminum foil and lightly grease with cooking spray. Set aside.
Evenly season each peach half (cut side) with tajin seasoning. Place the peaches, cut-side downwards, on the baking tray.
Bake the peaches in the oven for 20-25 minutes, or until tender. Remove from the oven and cool. Put each peach half into a small bowl or ramekin, cut-side upwards.Â
In a medium bowl, combine mascarpone, heavy cream, sugar, and vanilla. Use an electric hand mixer on medium-high speed to whip until soft peaks form.
Scoop a large helping of whipped mascarpone and spoon it over the peach halves.
Add 2-3 basil ribbons then drizzle with honey. Enjoy!
