Ingredients
For the dough:
¾ cup whole milk
2¼ teaspoons active dry yeast
1 tablespoon granulated sugar
2 large eggs
¼ cup salted butter, melted
3 cups bread flour
1 head roasted garlic cloves
For the topping:
½ tablespoon coarse salt
¼ cup dried onion
1 tablespoon sesame seeds
1 teaspoon cracked black pepper
4 tablespoons unsalted butter, melted

Preparation
Make the dough: Warm milk over the stove or in the microwave. Check yeast packet for optimal temperature and confirm with a food thermometer.
Add yeast and sugar to the warm milk and gently stir to combine. Allow to sit for 5 minutes, or until yeast is foamy.
Pour milk/yeast mixture into the bowl of a stand mixer fitted with a dough hook attachment. Add eggs and butter then mix.
All at once, add flour. Mix on medium speed for 5 minutes then add the roasted garlic and continue to mix for another 2 minutes (7 minutes mixing in total), until the dough is smooth, slightly sticky, and has pulled off the sides of the bowl..
Generously grease a large bowl with cooking spray and place dough into the bowl. Turn the dough over to completely cover with cooking spray then cover the bowl with plastic wrap. Allow the dough to rise for 1 hour, or until the dough has doubled in size.
Punch down the dough and divide into 8-12 equal portions. Roll each portion into a ball and place in a greased 13x9 glass baking dish.
Cover the baking dish with plastic wrap and allow to rise for 30 minutes. Meanwhile, preheat the oven to 375℉.
Make the topping:Â In a small bowl, combine all of the seasonings. Mix well.
Use a basting brush to brush the melted butter across the top of each roll then generously sprinkle with the seasoning.
Bake the rolls in the oven for 20-25 minutes, or until golden brown and fluffy. Allow to cool in the baking dish. Serve warm.
