One-Dish Mediterranean Baked Salmon

Ingredients

  • 2 Ducktrap Lightly Smoked Atlantic Salmon Filets

  • 10 ounces feta cheese block

  • 2 pints multicolored cherry tomatoes, whole

  • 6 whole garlic cloves, peeled

  • Olive oil, for drizzling

  • Flaky salt, to taste

  • Ground black pepper, to taste

Preparation

  1. Preheat oven to 400℉. 

  2. Drizzle olive oil on the bottom of a 13x9 glass or ceramic baking dish. Add the salmon, skin-side down, into the dish and nestle the block of feta between the two filets.

  3. Arrange the tomatoes around the salmon and cheese then place the garlic cloves with the tomatoes.

  4. Drizzle the salmon, feta, tomatoes, and garlic with additional olive oil. Sprinkle the pepper over the entire dish, but flaky salt over the tomatoes only.

  5. Bake the salmon in the oven for 25-35 minutes, or until the salmon is pale and cooked through, the feta is lightly browned around the edges, and the tomatoes are soft.

  6. Allow to cool for 5 minutes before serving while warm. Enjoy!
