Ingredients
2 packages (15-count) frozen phyllo shells
1 ½ pounds chicken, cooked & shredded
½ cup creamy buffalo sauce
½ packet of ranch powder (0.5-ounce used)
1 (8-ounce) block of cream cheese, softened
1 cup shredded mozzarella cheese
Salt, pepper, and garlic powder, to taste
½ cup blue cheese crumbles (optional)
Scallions, thinly sliced

Preparation
Preheat oven to 350℉.
In a large bowl, combine chicken, buffalo sauce, ranch powder, cream cheese, and mozzarella. Stir with silicone spatula until just well combined, or use a stand mixer with a paddle attachment. Add spices to taste.
Spoon the chicken mixture into each of the phyllo cups. Top with blue cheese crumbles.
Place filled phyllo cups on a baking tray lined with parchment paper. Bake for 10-12 minutes, or until the shells are crisped and the cheese is melted on top.
Remove the phyllo cups from the pan and cool on baking tray for 5-10 minutes.
Top with scallions and enjoy!
