
Ingredients
¾ cup all-purpose flour
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepperÂ
¾ cup whole milk
1 tablespoon olive oil
20 ounces Ducktrap Lightly Smoked Salmon, skin removed, cut into 1-inch cubes
1½ cups plain panko breadcrumbs
Dipping sauce, optional

Preparation
Preheat oven to 425℉. Line a baking tray with parchment paper and lightly grease with cooking spray. Set aside.
In a large bowl, combine flour, garlic powder, onion powder, salt, and pepper. Use a whisk to mix well. Add milk and olive oil, and whisk again until the batter is smooth.
Add the cubed salmon pieces to the batter and toss to coat completely. Use a fork to remove each piece and gently shake off excess batter.
Pour the panko breadcrumbs into a medium bowl. Roll each salmon cube in the breadcrumbs. Place onto the prepared baking tray in a single layer, leaving a little space between each piece.
Bake the salmon in the preheated oven for 30-35 minutes, flipping halfway, or until deeply golden and crispy.
Remove from the oven and allow to cool slightly. Serve with any preferred dipping sauce. Enjoy!
