Creamy Baked Cajun Pasta

Ingredients

  • 2 pints cherry tomatoes, halved

  • 1 small yellow onion, sliced

  • ¼ cup olive oil

  • 4 cloves garlic, sliced

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • ½ teaspoon smoked paprika

  • 12 ounces andouille sausage, sliced

  • 8 ounces block cream cheese, cold

  • 16 ounces bowtie pasta

  • 2 cups fresh spinach

Preparation

  1. Preheat oven to 400℉. 

  2. In a 13x9 baking dish, combine tomatoes, onion, olive oil, garlic, seasonings, and sausage. Mix well.

  3. Place cream cheese block in the center of the baking dish.

  4. Bake in the preheated oven for 40-45 minutes, or until cream cheese is browned and melting.

  5. Meanwhile, cook pasta according to the package instructions. Drain and drizzle with a little olive oil to keep the pasta from sticking then set aside.

  6. Remove baking dish from the oven, add spinach, and stir together with cream cheese until creamy and spinach is wilted.

  7. Add pasta and stir again until pasta is completely covered. Taste and add additional salt and pepper, if desired. Enjoy!
