Cheesy Hashbrown Frittata

Ingredients

  • 8 large eggs

  • â…“ cup whole milk

  • 1 cup shredded parmesan cheese + extra, for sprinkling

  • 1 cup cooked tater tots or hashbrowns, diced

  • 1 tablespoon dried chives

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • ½ teaspoon garlic powder

  • Sour cream, if desired

Preparation

  1. Preheat oven to 400℉. Generously grease a large, 12-inch cast iron skillet and set aside.

  1. In a large mixing bowl, combine the eggs, milk, chives, and seasonings. Whisk until well combined.

  2. Add 1 cup of cheese and hashbrowns. Fold into the egg mixture.

  3. Pour mixture into the skillet and sprinkle with remaining cheese. Bake in the preheated oven for 15-20 minutes, or until the eggs are set and lightly golden brown.

  4. Remove from the oven and cool slightly. Top with sour cream, if desired, before serving. Enjoy!
