Ingredients
8 large eggs
â…“ cup whole milk
1 cup shredded parmesan cheese + extra, for sprinkling
1 cup cooked tater tots or hashbrowns, diced
1 tablespoon dried chives
¼ teaspoon salt
¼ teaspoon ground pepper
½ teaspoon garlic powder
Sour cream, if desired

Preparation
Preheat oven to 400℉. Generously grease a large, 12-inch cast iron skillet and set aside.
In a large mixing bowl, combine the eggs, milk, chives, and seasonings. Whisk until well combined.
Add 1 cup of cheese and hashbrowns. Fold into the egg mixture.
Pour mixture into the skillet and sprinkle with remaining cheese. Bake in the preheated oven for 15-20 minutes, or until the eggs are set and lightly golden brown.
Remove from the oven and cool slightly. Top with sour cream, if desired, before serving. Enjoy!
