Cast Iron Skillet Cheese Pizza

Ingredients

For the dough:

  • ¾ cup warm water

  • ½ tablespoon honey

  • 2¼ teaspoons rapid rise yeast

  • 2 cups bread flour

  • 1 teaspoon salt

  • 2 tablespoons olive oil


For the pizza:

  • 2 tablespoons cornmeal

  • ½ cup marinara sauce

  • 1 cup shredded mozzarella cheese

  • ½ cup shredded parmesan cheese

  • Olive oil, for drizzling

Preparation

  1. Make the dough: In a small bowl, dissolve the honey in the warm water and stir-in yeast. Rest for 5-7 minutes, or until yeast is activated and foamy.

  2. Combine flour and salt in a large bowl. Add yeast mixture and olive oil. Mix with a dough whisk until the dough is smooth and slightly tacky. Knead by hand on a lightly floured surface, if needed.

  3. Grease a large bowl with cooking spray. Shape the dough into a ball and place the dough into the bowl. Cover the bowl and allow the dough to rise for 45-60 minutes, or until the dough has doubled in size.

  4. Once the dough has risen, preheat the oven to 425℉ with a 12-inch cast iron skillet inside.

  5. Punch the dough down once and remove from the bowl. Gently shape the dough with your hands into a circle.

  6. Assemble the pizza: Remove the skillet from the preheated oven (will be VERY hot!) and sprinkle with the corn meal. Carefully place the dough into the pan.

  7. Evenly spread the sauce around the dough, leaving a ½-inch border of dough around the edge.

  8. Combine both cheeses and mix. Sprinkle cheese over pizza.

  9. Bake the pizza in the oven for 12-15 minutes, or until the crust is golden and cheese has melted.

  10. Drizzle a little olive oil over the exposed crust while the pizza is still hot. Allow to cool for a few minutes before slicing and serving. Enjoy!
