Ingredients
2 boneless, skinless chicken breasts
1½ cups fresh broccoli, chopped
8 ounces cream cheese, softened
1 cup cheddar jack cheese, shredded
½ teaspoon salt
¼ teaspoon ground pepper
½ teaspoon garlic powder
1 tablespoon salted butter, melted
½ cup panko bread crumbs

Preparation
Preheat oven to 425℉. Lightly grease an 8x8 glass baking dish with cooking spray.
Trim the excess fat off the chicken breasts and discard. Use a sharp knife to butterfly the chicken, but do not cut completely through. Set aside.
In a large mixing bowl, combine the cream cheese, shredded cheese, salt, pepper, and garlic powder. Mix until well combined. Stir in the broccoli until fully coated.
Place the chicken into the prepared baking dish, open-faced. Stuff the chicken with the broccoli cheddar mixture and fold the top half of the chicken over the mixture. Gently press down.
In a small mixing bowl, combine the butter and bread crumbs. Mix well. Top each chicken breast evenly with the bread crumb mixture.
Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked. If the bread crumbs start to brown too much, cover the baking dish lightly with aluminum foil.
Remove from oven and cool slightly before serving. Enjoy!
