2 cups shredded sharp cheddar cheese, divided
6 ounces cream cheese, softened
â…“ cup mayonnaise
4 ounces diced pimento
¼ teaspoon garlic powder
¼ teaspoon smoked paprika
¼ teaspoon onion powder
½ teaspoon salt
¼ teaspoon pepper

Preparation
Preheat oven to 375℉.Â
In a medium mixing bowl, combine 1½ cups cheddar cheese, cream cheese, mayonnaise, pimento, garlic powder, smoked paprika, onion powder, salt, and pepper. Use a silicone spatula to mix well.Â
Transfer dip to a small (1 quart) baking dish, preferably cast iron. Evenly sprinkle with remaining cheddar cheese.
Bake the pimento cheese dip in the preheated oven for 12-15 minutes, or until the cheese has melted on top.
Remove from the oven and allow to cool for a few minutes before serving. Enjoy with pretzels, chips, or crackers!
