Fortune Cookies

Ingredients

  • 3 egg whites 

  • ¾ cup granulated sugar 

  • ½ cup unsalted butter, melted 

  • ¼ teaspoon lemon extract 

  • 1 cup all-purpose flour 

  • 2 tablespoons water  

  • ¼ teaspoon vanilla extract 

  • Pinch of salt 

  • 2 ½ x ½ in. fortune strips, prepared

Preparation

  1. Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside.  

  2. In a stand mixer, whip egg whites and sugar on high speed until frothy.  Reduce speed to low, and stir in melted butter, vanilla, lemon extract, water and flour. 

  3. Working in small batches, use a spoon to drop a teaspoon of the batter onto the lined cookie sheet. Shape batter into 3 inch circles with room between for spreading. Bake for 5 to 7 minutes in oven until the edges are a light golden color. 

  4. Working quickly, immediately remove the cookies with a spatula, one at a time, and place a fortune strip in the center. 

  5. Fold the cookie circle in half, and then bend the ends of the half together into a U shape. Hold until cool enough to set. Repeat with remaining batter.

  6. Allow to fully cool. Enjoy!
