½ cup unsalted butter, softened
½ cup granulated sugar
1 large egg
¼ teaspoon vanilla extract
¾ cup finely chopped walnuts
12 walnut halves

Place a large skillet on the stove and warm over medium heat. Add chopped walnuts and stir constantly until toasted. Remove from heat.
In a large bowl, combine cake flour, baking powder, baking soda, and salt. Set aside.
Add butter and sugar to the bowl of a stand mixer. Mix on medium-high speed until light and fluffy.
Scramble the egg in a separate bowl and reserve 2 teaspoons of the scrambled egg. Pour the remaining egg into the stand mixer along with the vanilla and mix again until well-combined.
Add the flour and chopped walnuts to the stand mixer bowl and mix one more time until a cohesive dough is formed. Knead the dough by hand, if necessary, to create a smooth dough ball.
Divide the dough into 12 equal portions, roll into balls, and place on a baking tray lined with parchment paper.
Gently press one walnut half into the center of each dough ball and rest the dough for 15 minutes.
Preheat the oven to 350℉.Â
Brush the cookies with the egg wash and bake for 20 minutes, then turn off the oven and allow the cookies to sit in the oven for another 5 minutes. Remove and cool on a wire rack. Enjoy!
