Recipe: Candied Citrus Slices

Ingredients

  • Ice water bath

  • 4 citrus fruits (like orange or lemon), thinly sliced, seeds removed

  • 8 cups water, divided

  • 4 cups granulated sugar, plus more for coating (if desired)

  • Shine Dessert Glitter's edible glitter (optional)

Total Time: 3 hours

Instructions

  1. Scrub the citrus fruit peels to remove wax and chemicals. Cut crosswise in â…›-inch slices, discarding the ends.

  2. Add 4 cups of water to a large saucepan and bring to a boil over high heat. Add the fruit slices. Boil for 2 minutes. Transfer the slices to the bowl of ice water and discard the boiled water.

  3. In the same saucepan, combine the remaining 4 cups of water and the sugar. Bring to a boil over medium heat, stirring occasionally until the sugar has completely dissolved.

  4. Drain the fruit slices and add them to the syrup, then return to the mixture to a boil. Turn it down to low heat and simmer for 45-60 minutes, or until the peels are translucent. Stir every 15 minutes.

  5. Preheat oven to 175°F.

  6. Lay the slices on wire racks, and then place the racks on top of a cookie sheet to catch drips. Bake for 30 minutes, then coat each piece in granulated sugar. Return to the oven and increase the temperature to 200℉. Dry for another 60-90 minutes, or until the fruit is mostly dry.

  7. Coat the candied slices in granulated sugar again and let them cool completely, then seal in an airtight container until ready to use.

  8. Dust with edible glitter before serving. Enjoy!
