Recipe: Candied Citrus Slices

4 citrus fruits (like orange or lemon), thinly sliced, seeds removed

8 cups water, divided

4 cups granulated sugar, plus more for coating (if desired)

Scrub the citrus fruit peels to remove wax and chemicals. Cut crosswise in â…›-inch slices, discarding the ends.

Add 4 cups of water to a large saucepan and bring to a boil over high heat. Add the fruit slices. Boil for 2 minutes. Transfer the slices to the bowl of ice water and discard the boiled water.

In the same saucepan, combine the remaining 4 cups of water and the sugar. Bring to a boil over medium heat, stirring occasionally until the sugar has completely dissolved.

Drain the fruit slices and add them to the syrup, then return to the mixture to a boil. Turn it down to low heat and simmer for 45-60 minutes, or until the peels are translucent. Stir every 15 minutes.

Preheat oven to 175°F.

Lay the slices on wire racks, and then place the racks on top of a cookie sheet to catch drips. Bake for 30 minutes, then coat each piece in granulated sugar. Return to the oven and increase the temperature to 200℉. Dry for another 60-90 minutes, or until the fruit is mostly dry.

Coat the candied slices in granulated sugar again and let them cool completely, then seal in an airtight container until ready to use.
