Spicy Chocolate Loaf Cake

For the cake:

  • 1½ cups all-purpose flour

  • 1 teaspoon salt

  • ½ cup cocoa powder

  • 1 packet instant espresso

  • 1 teaspoon baking powder

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 2 teaspoons vanilla extract

  • ¼ cup Bee Friends Farm Datil Pepper Honey

  • ½ cup whole milk, room temperature

  • Semisweet chocolate chips, optional

For the icing:

  • ½ cup powdered sugar

  • 2 tablespoons Bee Friends Farm Datil Pepper Honey

  • 1 tablespoon whole milk

  1. Preheat oven to 350℉. Lightly grease a 9x5 loaf pan. Set aside.

  2. Make the cake: In a large mixing bowl, combine the flour, salt, cocoa powder, espresso, and baking powder. Mix well and set aside.

  3. Add the butter and sugar to the bowl of a stand mixer fitted with a paddle. Mix on medium speed until light and fluffy. Add eggs, vanilla extract, and honey. Mix again until fluffy.

  4. Add ½ of the dry mixture and ½ of the milk. Mix on low speed. Repeat with remaining ingredients.

  5. Pour the batter into the loaf pan. Use a silicone spatula to evenly smooth the batter. Sprinkle with chocolate chips, if desired.

  6. Bake the loaf cake for 45-60 minutes, or until a cake tester inserted into the center comes out clean.

  7. Cool in the pan for 5 minutes, then remove from pan and cool completely on a wire rack.

  8. Make the icing: In a small bowl, combine powdered sugar, honey, and milk. Whisk well.

  9. Drizzle the icing over the cake. Slice and serve.
