Soft-Baked Orange Cranberry Honey Cookies

For the cookies:

  • 3¼ cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 cup salted butter, room temp

  • 1 cup granulated sugar

  • ⅓ cup Bee Friends Farm Saw Palmetto Honey

  • 1 large egg

  • 3 teaspoons orange zest

  • 1 teaspoon vanilla extract

  • 1 cup dried cranberries

For the icing:

  • ½ cup powdered sugar

  • 2 tablespoons Bee Friends Farm Saw Palmetto Honey

  • 1 tablespoon whole milk

1. Preheat oven to 350℉. Line baking tray with parchment paper. Set aside.

2. In a medium mixing bowl, combine flour and baking powder.

3. Add butter and sugar to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy. Scrape down the bowl.

4. Add honey, egg, orange zest, and vanilla extract. Beat again until well combined. Scrape down the bowl.

5. Slowly add the dry ingredients to the stand mixer, ⅓ at a time. Stop once a cohesive dough is formed. Fold-in cranberries.

6. Roll 1 tablespoon of dough into a ball and place onto prepared baking tray. Gently press down to flatten slightly.

7. Bake for 12-15 minutes, or until the top is dry and the edges are set. Do not overbake.

8. Allow to cool completely on baking tray. Meanwhile, combine powdered sugar, honey, and milk in a small bowl. Mix with fork until combined and no clumps remain.

9. Use a spoon or piping bag to drizzle the icing over the cookies. Enjoy!
